Gyu-Kaku Japanese BBQ – Tustin, independently owned and operated by Enry JP Corporation, a Gyu-Kaku franchisee, is seeking an experienced and motivated Assistant Restaurant Manager.
We are looking for a hands-on restaurant leader who enjoys developing people, making sound operational decisions, maintaining high standards, and taking ownership of restaurant performance.
Our Tustin restaurant operates with approximately 35–40 FOH and BOH employees, supported by management and Shift Leads.

Key Responsibilities
As Assistant Restaurant Manager, you will work in partnership with the General Manager while independently managing restaurant operations within your assigned areas of responsibility.
Responsibilities include:
- Direct and supervise FOH and BOH employees and provide leadership to Shift Leads
- Assign and coordinate work, monitor performance, coach, train, evaluate, and develop employees
- Maintain an active leadership presence on the restaurant floor by supervising operations, service standards, and team performance
- Participate in interviewing and provide meaningful recommendations regarding hiring, staffing, employee performance, corrective action, and advancement
- Exercise appropriate managerial judgment when addressing staffing, employee issues, guest concerns, and operational situations
- Plan staffing and schedules based on business needs
- Monitor sales, labor, food cost, inventory, productivity, and other key performance indicators
- Assist with purchasing, vendor deliveries, invoices, inventory, timekeeping, and payroll review
- Ensure compliance with food safety, workplace safety, sanitation requirements, company policies, and applicable laws
- Maintain high standards for guest service, food quality, cleanliness, and restaurant presentation
- Work with the General Manager to achieve sales, profitability, cost-control, service, and operational goals
- Assume management responsibility for restaurant operations when the General Manager is not present
Franchise & Brand Standards
The Assistant Restaurant Manager is responsible for helping ensure compliance with Gyu-Kaku brand standards, franchise requirements, recipes, promotions, operating procedures, and service standards, while exercising appropriate managerial judgment in day-to-day restaurant operations.
Qualifications
- 1+ years of progressive restaurant management or supervisory experience
- Full-service and/or high-volume restaurant experience preferred
- Experience supervising and developing restaurant employees
- Strong leadership, communication, and problem-solving skills
- Knowledge of scheduling, labor management, food cost, inventory, and restaurant operations
- Food safety knowledge/certification preferred
- Toast POS or similar system experience is a plus
- Flexible availability, including evenings, weekends, and holidays as business needs require
Japanese restaurant experience is not required.
